You can specify a dollar amount, certain assets, or a percentage of your estate.

We have recently set up Columbia Arts Endowment Fund and the funds donated will be managed by the Oregon Community Foundation. They currently manage $880 million dollars and have been managing money for their Agency Partners for 32 years.
